Spicy Chicken Wrap


When I first met my husband he would not eat anything chicken, I mean not one thing.
So I made it my mission when I started cooking to create some chicken recipes that
would change my hubby's mind. I made these spicy chicken wraps and he has been hooked
on them ever since. I don't think he would mind if we had it at least once a week.
Try this recipe, you will fall in love.


First you'll need to marinade the chicken for at least two hours, if not more.
For the marinade you'll need:
  • 2 cups H2O
  • 1/3 cup soy sauce
  • 3 TBLS sugar
  • 2 TBLS salt
  • 2 TBLS white vinegar
  • 1 1/2 tsp cayenne pepper
  • 2 tsp liquid smoke
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp pepper
 Mix all ingredients in a seal bag with 4 chicken breast and refrigerate for two hours.

Next you'll make pico de gallo. In a small bowl combine:
  • 2 med. tomatoes, diced
  • 1/3 cup diced red onion
  • 1 small jalapeno, seeded and diced
  • 1 lime juiced
  • 2 tsp cilantro, torn
  • 1/4 tsp salt &pepper

Cover and refrigerate. Best if made ahead so the ingredients
blend together.

Next is the Mexican dipping sauce. Again make this ahead of time, so the
flavors come together nicely. Combine:
  • 1/2 cup mayo
  • 2TBLS minced red onion
  • 2 TBLS diced tomato
  • 1 TBLS buttermilk
  • 1 TBLS white vinegar
  • 2 TBLS cilantro
  • 1/2 jalapeno, seeded and diced
  • 3/4 tsp paprika
  • 1/2 tsp sugar
  • 1/4 salt
  • pinch of cayenne and cumin

Cook marinaded chicken either on the bbq or in a 425 degree oven, until done.
when chicken is done chop into small bite size pieces. Next use large tortilla shells,
and melt cheddar cheese in a dry skillet.

Take tortilla out of pan and fill with some chicken, some of the pico de gallo, and
shredded lettuce.




Roll up and slice. Serve with the Mexican dipping sauce.
It might seem like a lot of ingredients, but most of them repeat themselves
throughout the whole recipe.
For those of you who don't like chicken, give this a try, it might transform you.
For those of you like me who enjoy chicken, this will be
just another chicken dish you'll make quite often.
